Are the any scripts / products that do the inverse of your SalesForce to MySQL replication script. i.e. take a MySQL DB an re-create the DB using by creating the custom objects... in SalesForce?

No sir there is no script that I know of that will recreate the scripts the other way.

I started down that path at one time when I started messing around with the meta data API from salesforce. I then started to work on other applications and never picked it back up

I do believe that it would be possible, but at the same time it would be a script with a lot of checks to make sure that the field types matched up perfectly
